His extensive knowledge of the products has been inherited from a family of restaurateurs for four generations. His grandparents’ garden, his dad’s work and his curiosity and great joy in learning made him the great contemporary connoisseur, even though he likes to call himself a “craftsman of food.” In La Présef’s restaurant, every day, he is challenging himself: he seeks each day to ensure that in each dish you can sense the garden, hay, milk, tradition and revision. A test that faces up to the issue of genuinely zero-kilometre raw materials, produced just a few steps away from his kitchen, farm and farmhouse inside which is housed the restaurant, which today boasts a Michelin star. This philosophy, straightforward and precise, has always been in Gianni’s soul since his grandmother sent him to Monza to learn the craft in the kitchen of Erminio Curti. In a year of apprenticeship, young Tarabini tried to capture all the secrets of the great chef and, once he returned to the family restaurant, set up a menu based only on fresh raw materials.

Brianzolo Class 1989 by Renat. For more than year he has been a chef at La Locanda del Notaio di Pellio Intelvi, in a valley between Switzerland and Lake Como, where he was able to confirm the Michelin star that illuminates the restaurant since six years ago. His travel abroad ( a big opportunity and influential experience in Paris) are very important to know differents techniques and for use a new products. He will be the person to welcome you into the dining room of Innocenti Evasioni. Extroverted and creative since birth, with a talent for interpreting tastes, he offers a smile and some advice, leading the diners in an unforgettable experience. Tommaso also manages the wine cellar, always seeking innovations for the menu; to do so, with Eros Picco, he directly visits the vintners. Over his career, he has worked in some of the most renowned Italian restaurants, until he dedicated his whole heart and creativity to the restaurant that he opened with Eros.
The years have offered him opportunities to travel to places all over the world, where he has been called for his experience as a Chef. The search for taste, care for the environment, and attention to quality service are only some of Tommaso’s passions. For years, he has also appeared on television as Chef Resident on the “Detto Fatto” (No sooner said than done) program on RAI Two. Those who prefer to read instead may just leaf through the magazine “La Cucina Italiana” (Group Condé Nast), where his recipes are published.

Born in Lecco in 1962, he was to be one of the greatest Italian chefs in the world. He graduated in 1977 at the Bellagio Hotel Institute, and got precious training in great hotels and starred restaurants all over the world, so that, at just 27, he became a personal chef of the English royal family. In 1991 he was a chef at the White House. His success then led the Italian to the creation and opening of the “Terrazza”, the Eden of Rome, where he stayed for nine years, winning Michelin Stars, before then going to the Palace Hotel in St. Moritz.
For eight years in Japan with his group he opened and ran over 30 Italian restaurants, including the Armani Ginza Tower in Tokyo. In 2008 he was awarded “Best chef in the world”. In 2012, he was elected President of the Euro Toques – Italy. In 2014 he was appointed by President Napolitano Commendatore della Repubblica Italiana and Ambassador of Italian Food. In 2015, he was elected President of Euro-Toques International. Since 2017 he has been a consultant chef for Castadiva Resort in Blevio (Co) and has opened Il Mercato restaurant in Taiwan.

Claudio Sadler is today one of the leading chefs in Milan’s dining scene. The path that has led him to where he is was forged of talent, commitment and success. He began in his first eatery, opened in Pavia in 1982, and then he moved to Milan, to its Osteria di Porta Cicca, awarded in 1991 with the Michelin star, and eventually moved to Triolo and was awarded his second star in 2002. in parallel with this path, there are so many deviations that made Sadler the professional he is today: a teacher, he created the Q.B.’s food and gastronomic centre, with courses designed together with fellow enthusiasts and academics; he was able to challenge others and create collaborations, was one of the founders of the Jeunes Restaurateurs d’Europe and is now President of Le Soste; he is also consultant chef to important companies including McDonald’s and Autogrill. All this together is the base of a cuisine that is rigor, awareness and creativity combined, which resumes traditions by interpreting them according to his own personality and with love for innovation.
